So I just finished all my prep for this week! Fruits and veggies washed, cut and in containers ready to go! This week I’ll be noshing on blueberries, strawberries, nectarines, plums, tomatoes, broccoli, yellow and orange bell peppers, green beans, and arugula. Hello roughage!
Plus I tried two new recipes to make my breakfasts and lunches quick and easy to make in the mornings. Thanks to Tessa of Tessa Sweats I will be enjoying Egg White, Turkey Sausage and Pepper Muffins (I adapted the recipe, but for her original recipe go here).
Tessa’s Egg White Muffins….adapted
makes 6 muffins
- 1 cup egg whites
- 4oz turkey sausage
- 2T milk
- 1/4 tsp baking powder
- 1tsp vegetable oil
- 1/2 cup bell pepper (I went with orange and yellow)
- salt and pepper
If raw cook turkey sausage until cooked through, then add bell pepper. Cook until softened. In a bowl whisk together egg whites, milk, baking powder, oil, salt and pepper. Divide the turkey sausage and bell peppers between 6 muffin cups (I followed Tessa’s lead and used aluminum foil cups on a baking tray). Ladle egg white mixture into the six cups evenly. Bake at 375 until cooked through (18-20 minutes). Enjoy!

The second recipe I tried was SUPER EASY! Who doesn’t love easy?!
Black Bean Soup (from WW cookbook)
- 2tsp olive oil
- 2 onions, chopped (I used 1/2 an onion….2 seemed like a LOT)
- 2 garlic cloves minced
- 1 (15 1/2 ounce) can of black beans, rinsed and drained
- 1 3/4 cups chicken or vegetable stock
- 1 cup water
- 1tsp ground cumin
- 1/4 tsp black pepper
- 1/2 cup cilantro chopped
- 2 scallions, thinly sliced
- Lime wedges
Heat oil in a saucepan over medium heat. Add onion and garlic, cook until onions are softened. Add beans, broth, water, cumin and pepper; bring to boil. Reduce heat and cover with lid, allow to simmer for about 15 minutes. Remove from heat and let cool for 5 minutes. Puree soup in batches with a food processor or blender. Return to saucepan and reheat. Serve topped with cilantro and scallions. Add lime wedges on the side.
